Cracked Wheat Bread

Add 1/2 C cracked wheat to 1 1/2 C boiling water. Cook about 20 minutes until all the water is absorbed (consistency of rice). Let cool.

2 Tbsp yeast dissolved in 1 1/2 C warm water
3 Tbsp brown sugar
1 Tbsp salt
1/3 C dry milk
1/3 C corn oil
1/4 C honey, optional
2 C whole wheat flour
bread flour as needed

Let rise, 20-40 minutes. Form into 3 loaves. Let rise to double. Wash with egg/water mixture; sprinkle with sesame seeds. Bake 45 minutes at 375.
